Breakfast of Champions

Heirloom tomato season continues in all its glory. This is the time of the year when I look for every possible excuse to include them in the meal. Behold, this morning's gorgeous breakfast:


Egg with heirlooms on half an English muffin, placed on top of a basil leaf with a hint of goat cheese


Oh, heirlooms. I am utterly, completely at your mercy.

mmmmmmmmmm heirlooms. mmmmmmmm goat cheese. mmmmmmmm plates from Pottery Barn that I so wanted in yellow, real-real bad.

Yum! Also, I kind of hate you for having it together enough to make a legitimate breakfast on a weekday. If I manage to do any better than grabbing fiber one bar it's a big deal. Certainly don't ever have time to eat it on a plate like a grown up. Go you!

I have a tomato and pepper garden for the first time and no idea what to do with them. Help!

Three things:

1) I am in no way, shape, or form a morning person

2) Most mornings I assemble breakfast in my office kitchen

3) When I do eat at home before work, it has to be quick - and this was! Egg rings are your friend. All I did was pile chopped tomatoes on top of the egg in the ring and let it sit. Voila!
